Turkey Bolognese Sauce

The Bolognese Sauce may be frozen.

Ingredients

4 tbs. of oil
1 lb. (500 g) of pieces of chopped turkey legs and breast
8 slices of pancetta, chopped
1 tray of mushrooms, sliced
1 medium onion, diced
1 branche of celery, diced
1 of carrots, diced
cup of black Calamata olives, pitted
1 can (28oz) of plum tomatoes, diced
1 small can of tomato paste
4 garlic cloves, chopped
1 tbs. of fennel seeds
2 tbs. of flour
1 tbs. of maple syrup
To taste: salt and pepper

1. In a large saucepan over high heat, brown the pancetta in a bit of oil until crispy; reduce heat to medium. Add turkey, mushrooms, onion, garlic, celery and carrots. Stir well. Cover and cook an additional 10 minutes. Sprinkle with flour and stir well.

2. Add tomatoes, tomato paste, fennel seeds, olives and maple syrup. Simmer over low heat for 1 to 1½ hour. Salt and pepper to taste.

The Turkey Bolognese Sauce may accompany a multitude of Italian recipes. You can even serve it with corn chips, tacos, hamburgers, hot dogs, fries or rice. Remember that it may be frozen and is best served warm. Bon appétit!
