Caribbean Exceldor
Turkey Stew

The stew may be frozen.

Ingredients

1 lb. (450 g) of pieces of turkey wings, drumsticks and breast
4 tbs. (60 ml) of grilled sesame seed oil
4 garlic cloves, chopped
1 red sweet pepper, cut into thin rings
1 green pepper, cut into thin rings
2 zucchinis, cut into thin rings
1 tbs. (15 ml) of fresh ginger, chopped
3 tbs. (45 ml) of coconut, unsweetened and grated
2 tbs. (30 ml) of ground almonds
1 tsp. (5 ml) of ground cinnamon
2 tbs. (30 ml) of oyster sauce
2 cups (500 ml) of chicken broth
1 tbs. (15 ml) of liquid chicken concentrate
2 cans of crab
1 pinch of crushed chili

1. Heat oil in a saucepan over high heat. Add pieces of turkey, peppers, zucchinis, ginger and garlic. Stir well and brown for 2 to 3 minutes.

2. Add coconut, almonds, cinnamon, oyster sauce and chicken broth. Cook about 5 minutes. Add liquid chicken concentrate, drained crab and crushed chili. Stir well. Cook an additional 2 to 3 minutes and serve.

I would like to suggest a particular wine of which I am very fond. It's called Gewürztraminer Cuvée Bacchus and costs somewhere around $18 per bottle. This mythical variety of grapes is full and complex enough to accompany orange and Grand Marnier turkey, orange butter asparagus and even Caribbean stew. It has a very aromatic rose and exotic fruit bouquet, and its taste is soft and full followed by citrus notes. Serve between 11°C and 13°C.
