Turkey and Asparagus Au Gratin with Orange Butter

Do not freeze. It may be refrigerated up to 4 days.

Ingredients

1 lb. (450 g) of pieces of turkey thighs and breast
2 bunches of asparagus
6 tbs. of butter
4 tbs. of concentrated orange juice, frozen
2 tbs. of brown sugar
1 pinch of nutmeg
1 pinch of cumin
1 cup of 15% cooking cream
cup of Gruyère cheese, grated
To taste: salt and pepper

1. Cut asparagus stems and blanch in salted, boiling water for 3 minutes; then let them cool in cold water. Set aside.

2. Melt butter in a saucepan over medium heat. Add concentrated orange juice, brown sugar, nutmeg and cumin. Stir. Add cream, salt and pepper. Let thicken for a few minutes.

3. Place asparagus and turkey in an ovenproof dish. Top with sauce and sprinkle with Gruyère.

4. Brown in preheated oven at 190°C (375°F) for 10 to 15 minutes or until top is golden.
