Orange and Fennel Minestrone

Preparation time: 10 minutes
Cooking time: 40 minutes
Level of difficulty: Easy

The minestrone may be frozen.

Ingredients

2 L of Exceldor Turkey Broth
1 can (28oz) of tomatoes, diced
1 tbs. of liquid chicken concentrate (like Bovril)
orange
1 fennel bulb, cut into small dices
2 tbs. of maple syrup
1 cup of canned legumes
1 small onion, cut into small dices
cup of parmesan cheese, grated
bouquet of fresh tarragon, chopped (optional)
To taste: salt and pepper

1. Place all the ingredients, except the parmesan cheese and tarragon, in a large saucepan and bring to a boil.

2. Reduce heat by half and simmer for about 30 minutes.

3. Serve in bowls and sprinkle with tarragon and parmesan cheese.
