Ingredients
1 lb. of yellow potatoes, peeled1. Use a vegetable scoop to make small potato balls or, to simplify things, buy them pre-made.
2. In a large frying pan over medium heat, melt fat and sear potatoes, stirring constantly. As soon as the potatoes change colour, reduce heat, cover and simmer on very low heat. Gently stir occasionally with a wooden spoon.
3. When the potatoes are cooked and golden, use a pierced spoon to remove them from the frying pan; place them on a paper towel to soak up the excess fat. Salt and pepper. Before serving, sprinkle with thyme, coriander and parmesan cheese.

It's very difficult to determine the number of servings for this recipe – there never seems to be enough. But what a wonderful accompaniment to Grand Marnier and Orange Roasted Exceldor Turkey!
