Apples Stuffed with Turkey

The browned apples are not to be frozen, but they may be refrigerated up to 3 days.

Ingredients

1 lb. (450 g) of pieces of turkey legs and breast
6 large Cortland apples
6 tbs. of basil pesto
2 green onions, chopped
6 tbs. of fresh ricotta cheese or goat's milk cheese
cup of cheddar cheese, grated
To taste: salt and pepper

1. Cut off the apple tops. Use a serrated spoon or vegetable scoop to hollow out the apple halves but make sure to keep a thin layer of flesh. Set aside the removed apple flesh.

2. In the bowl of a food processor, place pieces of Exceldor turkey, pesto, green onion, apple flesh and fresh ricotta or goat's milk cheese. Pulsate until well blended.

3. Stuff each apple half with turkey mixture and top with cheddar cheese.

4. Bake in a preheated oven at 177°C (350°F) for 20 minutes.
