Turkey Quiche with Apples and Grilled Vegetables

Preparation time: 10 minutes
Cooking time: 45 minutes
Level of difficulty: Easy

The quiche may be frozen once it's cooked.

Ingredients

1 lb. (450 g) of pieces of turkey thighs and breast
2 pie shells, frozen
5 large eggs
2 cups of 15% cooking cream or milk
1 pinch of Cayenne pepper
1 of pieces of Cortland apples
1 red sweet pepper, cut into strips and grilled
1 green pepper, cut into strips and grilled
1 cup of cheddar cheese, grated
To taste: salt and pepper

1. Lightly whisk eggs, cream and Cayenne pepper. Add a pinch of salt and pepper.

2. Divide the turkey, apples and peppers equally into each pie shell.

3. Pour the egg mixture into each pie and top with shredded cheddar cheese. Bake in preheated oven at 190°C (375°F) for about 35 minutes.

It is very important to whisk the eggs lightly or else, as they bake, they will rise above the crust like an egg soufflé.

The more they're whisked, the more they'll rise.
