Cream of Pepper
and Apple Soup

Ingredients

2 L of Exceldor Turkey Broth
3 red peppers, coarsely sliced
3 green peppers, coarsely sliced
2 medium onions, coarsely sliced
6 garlic cloves
4 Cortland apples, peeled and coarsely shredded
1 cup of 15% cooking cream
To taste: salt and pepper

1. In a large saucepan, bring to a boil all the ingredients, except cream and apples. Reduce heat by half and simmer for about 30 minutes.

2. Purée using a hand mixer until smooth.

3. Thicken with the 15% cream.

4. Pour into bowls and add apple slivers before serving.
