Turkey Shepherd's Pie
with Cheddard Potatoes

Cooking time: 50 minutes

Shepherd's Pie may be frozen.

Ingredients

1 lb. (450 g) of cooked turkey thigh pieces, add pieces of breast
8 slices of bacon, diced
1 cup of deep frozen green peas
1 cup of kernel corn
1 cup of cream corn
1 large red onion, chopped
cup of chicken broth
1 tbs. of flour
To taste: salt and pepper

Cheddar Mashed Potatoes

5 lbs large yellow potatoes, peeled
4 tbs. of butter
cup of milk or cream
cup of 1-year-old cheddar cheese, grated (Cru du Clocher)
1 egg yolk
1 pinch of Cayenne pepper
To taste: salt and pepper

1. Boil whole potatoes in salted water until tender.

2. In a large frying pan, brown the bacon over medium-high heat until crispy; remove the excess fat from the pan. Add onion and sauté until golden. Sprinkle with flour; mix well and add the remaining ingredients. Reduce heat and simmer for about 5 minutes. Set aside.

3. Drain then mash the potatoes with the butter and egg yolk. Add the remaining ingredients and mix well.

4. Poor the turkey mixture in a large Pyrex dish and top with the mashed potatoes. Use a pastry brush to baste top with a bit of melted butter and bake at 200 oC (400°F) for about 15 to 20 minutes.
