Turkey Sandwich

Ingredients

1 lb. (450 g) of pieces of turkey legs and breast
8 slices of buttered toast

Nicolas' Garnish

2 tbs. of Dijon mustard
4 eggs
cup of pale ale
lb. of Cogruet cheese, grated
lb. of old cheddar cheese, grated
1 pinch of Cayenne pepper
4 branches of parsley
To taste: salt and pepper

1. Mix all of the garnish ingredients in a food processor. Place pieces of turkey on each slice of toast and top with garnish. Bake at 190°C (375°F) for about 15 minutes.

2. Cut each slice of toast into four pieces and serve.
