Turkey Consommé with Beer and Mixed Vegetables

Servings: 16 sampling portions

Level of difficulty: Easy

The turkey consommé may be frozen.

Ingredients

4 cups (1 L) of Exceldor Turkey Broth
1 tbs. of liquid chicken concentrate (like Bovril)
1 cup of pale ale
1 carrot, finely diced
1 branche of celery, finely diced
1 onion, finely diced
tsp. of black pepper
3 garlic cloves, finely chopped
9 branches of coriander, fresh and chopped

1. In a saucepan, heat the broth, concentrate, beer, pepper and garlic. Bring to a boil and add the vegetables. Cook for about 4 to 6 minutes. The vegetables should still be crunchy.

2. Pour into sampling bowls, cups or shooters. Sprinkle with fresh coriander prior to serving.
